Fresh Strawberry Basil Refresher

One of my favorite things about summer is slowing down enough to enjoy life's simple pleasures—fresh fruit, sunshine, good conversation, and a cold drink on the porch.

Since we're celebrating all things strawberry this month, I thought it would be fun to revive a little piece of my past by bringing back Kim's Kitchen. 😊

This refreshing drink is light, naturally sweet, and perfect for backyard cookouts, porch sitting, or simply taking a few minutes to enjoy the season.

• Prep time: 10 minutes
• Rest time: 15 minutes
• Yield: 2 servings

Ingredients

• Fresh Strawberries: 1 cup, hulled and finely chopped
• Fresh Basil Leaves: 5 large leaves, torn in half
• Raw Honey: 1 to 2 tablespoons (adjust based on berry sweetness)
• Fresh Lemon: 1 large, juiced (about 2 tablespoons)
• Chilled Pure Water: 1 cup
• Sparkling Mineral Water: 1 to 2 cups, chilled for serving
• Ice: For serving

Instructions

1. Macerate the Berries: Place the chopped strawberries, torn basil leaves, and raw honey into a small bowl. Use the back of a fork or a wooden spoon to firmly mash the berries and bruise the basil. Let this mixture sit at room temperature for 15 minutes to allow the honey to draw out the natural strawberry juices.
2. Blend the Base: Transfer the strawberry-basil mixture into a blender. Add the fresh lemon juice and 1 cup of pure water. Blend on high speed until completely smooth.
3. Strain: Pour the mixture through a fine-mesh sieve into a small pitcher, pressing down on the solids with a spoon to extract all the liquid. Discard the pulp.
4. Assemble: Fill two tall glasses with ice. Divide the strained strawberry base evenly between the glasses.
5. Finish and Serve: Top each glass with chilled sparkling mineral water. Stir gently from the bottom up and serve immediately.
